I thought about white feathers too, but I was afraid they would be from too long ago for anyone but us old people to understand...

My other two thoughts are:

A lion doll.  You could either have it be ironic (you know -- sort of the opposite of cowardice) or you could say that it's the Cowardly Lion from the Wizard of Oz.  If you could get an actual Cowardly Lion doll, that would be better.  But maybe your teacher would give you extra credit for being ironic...

A mouse.  Not ironic, but a mouse should work as a symbol of cowardice since they're supposed to be timid.
